This inspired versatile lemon rice recipe is a fresher take on a classic, with cashews.

Instructions

  1. Method

    1. Boil basmati rice and set aside.
    2. Extract juice from the lemons.
    3. Heat oil and crackle mustard seeds.
    4. Add urad dal, whole red chilies, turmeric powder, chana dal, cashews, curry leaves and sauté for 2 minutes.
    5. Add lemon juice and salt to taste.
    6. Simmer for 5 minutes.
    7. Remove from the fire and cool.
    8. Pour this mixture over the cooked rice and mix.
    9. Adjust the seasoning and serve hot.
