White Fish and Prawn Stew with Almonds and Saffron

Ingredients
  • 1 kilogram hake
  • Monkfish or another white fish (cut into pieces)
  • 8 prawns
  • 2 onions
  • 2 carrots
  • 1 small tomato (grated)
  • 1 small clove of garlic
  • 100 grams toasted almonds
  • 1 small sachet of saffron
  • 20 grams flour
  • 1 bay leaf, 200 ml water
  • 2 teaspoons of salt
  • 2 tablespoons of olive oil
Instructions
  1. 1) Fry the prawns in the oil then remove them and set them aside.
    2) Use the same oil to fry the carrots and onions.
    3) Add the tomato and allow to reduce.
    4) Add the flour, the bay leaf and bring to the boil.
    5) Add the water and simmer for 15 minutes before passing through a colander.
    6) Blend the toasted almonds, garlic, saffron, salt and a tablespoonful of water with a hand blender and add to the pan.
    7) Add the pieces of fish and cook for 10 minutes.
    8) Add the prawns just before serving.
