Description

This autumn recipe, flavored with turmeric, cinnamon and sweet touches of almonds and dried apricots, is perfect for warming up the body and preparing it for winter.

Ingredients
    Ingredients:
  • 4 tbsp olive oil
  • 1 garlic clove peeled and cut into 4 parts
  • 140g onion, peeled and diced
  • 1tsp ground cinnamon
  • ½ tsp ground turmeric
  • 740g butternut squash peeled and cut into cubes
  • 50g dried apricots (soaked overnight)
  • 84g white almonds (soaked overnight)
  • 1L 150ml water
  • 1tbsp sea salt
  • Toppings:
  • Chopped almonds with skin to decorate
  • Ground pepper to decorate
Instructions
  1. 1. Peel the garlic and cut into quarters.
    2. Peel the onion and pumpkin and cut into cubes.
    3. Wash and drain both dried apricots and almonds..

    In a pot, heat the oil and sauté the garlic together with the onion for 2-3 minutes.
    4. Add the spices and stir.
    5. Add the pumpkin, almonds, dried apricots, water and salt.
    6. Cover and cook over medium heat for 35 minutes.
    7. Turn off the heat and blend with the blender until you get a fine and thick consistency.
    8. Serve hot with pepper and chopped almonds on top.
