Ingredients
  • 100 grams bulgur wheat
  • 300 milliliters very hot water
  • 1 red pepper (finely diced)
  • 1 green pepper (finely diced)
  • 2 tomatoes (finely diced)
  • 1 cucumber (finely diced)
  • Mint leaves (finely chopped)
  • 1 teaspoon of cumin
  • 1 tablespoon of dried cranberries
  • 4 dried apricots (chopped)
  • 4 prunes (chopped)
  • Dried figs
  • 30 grams pistachios (chopped)
  • 6 tablespoons of olive oil
  • 2 teaspoons of salt
  • The juice of one lemon
Instructions
  1. 1) Soak the bulgur wheat in the hot water for 30 minutes. 

    2) Drain well, squeezing out the water with your hands. 

    3) Mix together all the ingredients and dress with olive oil, salt and the lemon juice.
