Description

An easy, rich and indulgent vegan cheese spread. Ideal as a healthy snack, in sandwiches or as a dip served with raw veggies.

Ingredients
    Ingredients:
  • 100g raw cashews soaked in water overnight
  • ¼ tsp nutmeg
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1 tbsp nutritional yeast
  • ½ tsp sea salt
  • 4 tbsp lemon juice
  • 35ml water
  • Ingredients for the salad:
  • 70g baby spinach (washed)
  • 1 (150g) avocado
  • 18g coriander (stem and leaves)
  • 10g radish sprouts
Instructions
  1. 1. Drain and wash the cashews well.
    2. Put all the ingredients in a blender or thermomix and blend until you get a creamy texture.
    3. Once ready, remove from the fridge and serve with bread or crackers.
