    Fried passion fruit and cauliflower sauce
  • 1st. part
  • 185grs of mashed cauliflower
  • 110grs of passion fruit
  • 200grs of whole milk
  • 2nd. Part
  • 120grs of whole milk
  • 50grs of cream
  • 100grs of noisette butter
  • Cauliflower
  • 1 medium cauliflower unit (serves 10 people)
  • 100ml of water
  • 100grs of butter
  • Peanut foam
  • 300grs of roasted peanuts, shelled and unsalted
  • 350ml of milk
  • 200grs of cream
  • 120ml of rice vinegar
  • Salt to taste
  • Siphon for foam (type of whipped cream)
  • 2 gas capsules
Instructions
  1. Fried Passion Fruit and Cauliflower Sauce Preparation
    1st. part
    In a high saucepan put the mashed cauliflower and bring to a boil, add the milk and let it fry, add the passion fruit with the seeds and mixer.

    2nd. Part
    Put the noisette butter in a pan, bring to a boil and fry the cream with the milk. Mix the ingredients of the first part and you're done.

    Cauliflower Preparation
    In a high pot, place the water, butter and cauliflower over medium heat for approximately 20 minutes. Covered pot

    Peanut Foam Preparation
    Beat the peanut drink in a blender, pass the chinoix or a very fine sieve, reserve the milk. In a pan add the peanut drink, the cream and cook over low heat until the cream dissolves, remove from the heat add the salt and vinegar, mix well. Place in the siphon with the capsules and take the refrigerator.
